First up it’s time to make the rainbow biscuits, line 2 large baking trays with baking parchment and pop to one side for later. Pop the butter, sugar and Vanilla Extract into a large bowl and cream together until pale and smooth. Pour in the flour and mix together to form a biscuit dough, if the mixture is too crumbly don’t worry add a few tsps. of milk to bring it together.
Lightly dust your work surface with flour and roll out your biscuit dough to a thickness of approx. ½ cm.
Cut out rainbow shapes using a rainbow cutter or you can use a round cutter and cut the circles in half to create rainbow shapes. Pop your rainbows onto your prepared baking trays spaced slightly apart and chill in the fridge for 30 minutes, this helps the biscuits keep their lovely rainbow shape when baked.
10 minutes before the biscuits are ready to bake pre-heat your oven to 180°C/ 160°C fan/ Gas Mark 4. Pop your biscuits in the oven to bake for 15-20 minutes, until they are golden brown in colour. Remove the biscuits from the oven and leave to cool on the tray for 10 minutes before putting on a wire rack to cool completely.
Once your biscuits have cooled it’s time to get creative and decorate! Use your red decorating icing to create a red icing line around the top edge of your rainbow, then add an orange line, then yellow, green, blue and pink until you reach the base of the rainbow, look at those lovely colours!
Grab your white decorating icing a pipe cloud onto the edge of each rainbow and finish with a sprinkle of Bright and Bold Sprinkles!
